This summer, Theorem Vineyards released the 2018 Sauvignon Blanc from our Moon Mountain estate. Not only is it the first wine made from our Moon Mountain vineyard, but it is also the first white wine we’ve ever produced. Our 2018 Sauvignon Blanc showcases the unique characteristics of wines of both Napa and Sonoma.
Theorem Vineyards’ 2018 Sauvignon Blanc is a vibrant wine with a perfect balance of fresh acidity and rich fruit flavors. Strikingly aromatic, the 2018 Sauvignon Blanc leaps from the glass with a beautiful array of citrus, stone fruit, flowers, herbs, and minerals. Everything translates through the glass, with fleshy peach and ripe melon exploding on the palate. Lime zest and rocks tangle with jasmine, adding verve and complexity as it rides the long, crisp beam of acidity. This wine is delicate and refreshing, perfect for enjoying with your favorite dishes.
Theorem Vineyards Sauvignon Blanc Pairings
The crisp and fresh flavors of our Sauvignon Blanc pair wonderfully with a wide variety of foods. The beam of acidity in our wine cleanses the palate and prepares it for the next bite. Sauvignon Blanc pairs incredibly with various foods such as green vegetables (such as artichokes, asparagus, and zucchini), oysters, fresh herbs, pesto, and dishes with tangy dairy ingredients. Sauvignon blanc cheese pairings are also incredible to share with your loved ones as you prepare for dinner. The team at Theorem Vineyards chose several delicious recipes that would pair perfectly with our signature 2018 Sauvignon Blanc Moon Mountain District.
Poached Oysters with Pickled Cucumber & Caviar
Seafood dishes pair beautifully with our Theorem Vineyards Sauvignon Blanc. In this recipe, chef Stephen Harris of The Sportsman in England creates a delicious oyster dish. Chef Harris poaches the oysters in their own liquor before topping them with creamy beurre blanc, tangy pickled cucumber, and briny caviar.
See the recipe for poached oysters in pickled cucumber and caviar.
Pappardelle with Summer Squash & Arugula-Walnut Pesto
Pesto and zucchini are both fantastic ingredients to pair with our Sauvignon Blanc, and this recipe combines these two perfectly. Chef Kay Chun from F&W’s cuts zucchini and yellow squash into ribbons on a mandoline, and then tosses them with hot pasta.

Crunchy Green Salad with Goats Cheese & Mixed Seed Praline
If you want to pair a healthy dish with our Sauvignon Blanc, Sam Linsell creates a delicious green salad with goats cheese and mixed seed praline. This recipe has loads of green leaves and salty, creamy goats cheese. Not only does the cheese pair perfectly with our wine, but it also adds richness and savory flavor to the salad.

Our Sauvignon Blanc pairs incredibly with many artisanal cheeses, especially goat cheese. This recipe provides the top Sauvignon Blanc cheese pairings so that you can treat yourself with after your meal. Sauvignon cheese pairings are also perfect to share with your guests while you're preparing any of the dishes listed above.
Because of our Sauvignon Blanc’s bright acidity and fruitiness, our wine pairs well with the following cheeses:
- Soft and creamy goat cheese (Our favorite was coated in herbs!)
- Monterey Jack
- Parmigiano Reggiano
