The Inspiration That Led to the Creation of Theorem Vineyards

Kisha and Jason Itkin always have had a passion for traveling and experiencing new places, but they felt a special connection with Napa Valley. With each trip to wine country, they found themselves falling in love with the wines, scenery, lifestyle, and rich history. The idea of carving out a place together—a place to create lifelong memories for their entire family—while making world-class wines was irresistible.

Kisha and Jason wanted to create a home here.

They found a property tucked away on Diamond Mountain that had a long, storied history.

This 40-acre property, purchased in 2012, was joined with a neighboring 20-acre parcel a year later to create Theorem’s Diamond Mountain Estate. Kisha and Jason began the process of restoring the old land and historic structures to showcase all that it could be. One of the historic buildings on the vineyard property was a children's school. The Itkins decided to name their winery Theorem, paying homage to the school and Kisha's background in math and science. A “theorem” is defined as the truth established using accepted truths. It is appropriate that the journey of creating Theorem Vineyards has involved learning, resolving difficult problems, and discovering the truth at the heart of their land and vineyards.

Ultimately, the Itkin’s dream of a home-away-from-home led them to create a getaway destination for others.

What the Theorem Vineyards Team Has Built

Theorem Vineyards is nestled on the northern slope of Diamond Mountain in Calistoga, 1,100 feet above sea level. This breathtaking location allows our wines to take advantage of a unique blend of minimal fog, abundant sunlight, and volcanic soils—but our winery isn't only filled with beautiful views and vine hills. It also has historic structures with luxurious and modern interiors where we can share our ultra-premium wines.

Theorem is known for our flagship wine, Voir Dire—a 100% Cabernet Sauvignon produced from our oldest vines. Voir Dire is a full-bodied wine with high tannins and rich flavors that reflect the unique and breathtaking property here. Within a few years, we produced another Cabernet Sauvignon: Hawk's Prey. Hawk's Prey has an opaque purple core out to a ruby red rim. On the nose, there are elegant and complex aromas of ripe plums, milk chocolate, wild blackberries, cassis, violets, warm freshly tilled earth, and baking spices.

Recently, we released our first Sauvignon Blanc. It is a vibrant white wine that has a perfect balance of fresh acidity and lush fruit flavors. Strikingly aromatic, the 2018 Sauvignon Blanc leaps from the glass with a beautiful array of citrus, stone fruit, flowers, herbs, and minerals.

We also released our first Chardonnay and Merlot in early September.

The 2018 Chardonnay is bright and fresh, with notes of freshly squeezed lemon, tart pineapple, lime blossom, honeysuckle, and crushed rocks. On the palate, the bright citrus notes meld with a creamy texture that is reminiscent of lemon meringue with a similar ethereal lift. Just as the flavors envelop your palate, a beam of vibrant acidity slices through the creamy texture and creates a finish that is refreshingly bright and lingering.

The 2017 Theorem Merlot is a heady mix of ripe black cherries, fresh plums, milk chocolate, and roasted espresso. From the moment the wine touches your lips, it shows power, structure, and personality. As the wine glides over the mid-palate, it reveals a silky elegance wrapped in mountains tannins. The finish is long and protracted with lingering notes of ripe plums and roasted espresso.
