For years we’ve dreamed of a sparkling wine that tasted like our Moon Mountain site—bright, tensile, and true. Moon Mountain's high elevation, volcanic soils, and Pacific crosswinds create conditions uniquely suited to growing Chardonnay for sparkling wine — cool, tense, and electric. The moment we realized a portion of our Wente-clone Chardonnay was perfect for méthode traditionnelle sparkling wine, we committed fully: whole-cluster press, primary in barrel and steel, tirage, time on lees, and a whisper of dosage. Members of our team traveled to France to study the classics, then came home and did the work — riddle, rest, and wait.
This inaugural Theorem Blanc de Blancs vintage sparkling wine is mountain born and precision made: racy acidity from cool, wind-washed mornings; quiet depth from rocky volcanic soils; and a clean, extra-brut finish that keeps you reaching back for the glass. Just 60 cases were disgorged on August 12, 2024 — a small release, and a clear statement of intent.

Aromas of lemon zest, white peach, and jasmine lead into a palate that's electric yet composed — racy acidity, a fine bead, and an almost chalk-dust edge that mirrors the vineyard's stony terrain. The mid-palate gathers gentle creaminess from time on lees, then lands clean and dry (2 g/L) with lingering notes of citrus pith and wet stone. Serve at 45–48°F in a white wine glass for more texture and detail. Inspired by a grand cru Blanc de Blancs Champagne, this sparkling wine is beautiful now; expect added brioche and hazelnut nuances over 3–6 years.
