Wines allow us to create new tasting experiences when we pair them with different foods, especially steaks. Medium- and full-bodied red wines are particularly delicious with beef. To assist those looking to add maximum flavor, Theorem Vineyards has compiled some advice below on the best wine to pair with your steak dinner.
Filet mignon is an incredibly tender cut that comes from the thicker end of the cow’s tenderloin. Filet is one of the least fatty cuts and tends to have some of the most delicate flavors; that is why it is often served with sauces. If you plan on eating filet mignon with minimal additional flavors, we recommend a filet mignon wine pairing of aged Cabernet Sauvignon. An aged Cabernet’s tannins will have mellowed, and the delicate flavors of the filet would be mirrored by the delicate flavors of a fully matured wine. We recommend our 2012 Voir Dire Cabernet Sauvignon for your filet mignon wine pairing. The steep hillside and shallow soils of our vineyard give this wine tremendous length and class, while maintaining a fruit profile. The tannins are often a marker of Diamond Mountain wines; however, the unique microclimates of our northern AVA vineyard allow this wine to have phenolic ripeness of both fruit and tannins. Our 2012 Voir Dire is an elegant wine that pairs wonderfully with the delicate aspects of a filet mignon.
Kobe beef is Wagyu beef from the Tajima strain of Japanese Black cattle, raised in Japan’s Hyōgo Prefecture. This meat is tender and fatty, with delicate flavors and well-marbled texture. The wine you pair with this steak must match its tender characteristics. Cabernet Sauvignon is a perfect pairing for Kobe steaks, especially California Cabs. We recommend our own 2014 Voir Dire. The beautiful balance between acidity and tannin structure will coat the palate and complement the marbling in the Kobe. Voir Dire was produced from the oldest vines on our Diamond Mountain estate. This 100% Cabernet is a complex, timeless wine. Our wine is bold and full-bodied with tannins that remove the fat from the mouth. Its rich flavors reflect our unique, breathtaking vineyards. Our 2016 Hawk’s Prey would also be a beautiful pairing for Kobe steak.
New York Strip
New York strip comes from the cow’s short loin region, and it is one of the most versatile cuts. New York strips are rich in flavor and have a tight grain that provides medium tenderness. Although this cut tastes wonderful with just salt and pepper, you can add garlic and onion salt for a bolder taste. We recommend pairing your New York strip steak with a Cabernet Sauvignon that balances out the fattiness of the meat on the palate.
Our delicious 2016 Hawk’s Prey pairs great with a New York strip steak. Hawk’s Prey has an opaque purple core out to a ruby red rim. On the nose, there are elegant, complex aromas of ripe plums, milk chocolate, wild blackberries, cassis, violets, warm freshly tilled earth, and baking spice. On the palate, the wine is soft and lush with a dense core of flavors that mirror the nose and pairs wonderfully with a New York strip steak.
Porterhouse steaks come from the cow’s short loin region. This cut contains both filet mignon and New York strip cuts separated by a T-shaped bone. Porterhouse steaks pair best with medium-bodied red wines like Syrah because of its refined tannins and notes of black fruits. We recommend 2014 Constant Diamond Mountain Syrah. This 2014 vintage is a masculine, mountain Syrah with aromas of clove, licorice, and a hint of black olive. Each sip delivers waves of black cherry, subtle notes of peppercorn, wild game, and an undertone of earthy complexity. The silky tannin and substantial structure will pair perfectly with porterhouses. 2011 Alban Vineyards Reva Estate Syrah is also a great choice to pair with a porterhouse. This wine has a dark color and concentrated flavors of black fruits, fennel, and graphite. It also has unique iodine and oyster shell aromatics.
If you have a porterhouse with a rich sauce, we recommend pairing it with a full-bodied, high-tanning red wine like a Cabernet Sauvignon or a Merlot. We recommend 2015 Fisher Vineyards RCF Merlot. This wine is plump, juicy, and delicious; it has notes of ripe red cherry and raspberry fruit.

Top sirloin is a leaner cut of meat that has incredibly rich flavors that you won’t find in other cuts. It is a great cut for BBQing, marinating, or making kebabs. We recommend pairing top sirloin with a Zinfandel. Zinfandels are often fruit-forward yet bold red wines with delicious red fruit flavors and smoky, exotic spice notes. We recommend pairing top sirloin with 2015 Kinsella Estates Spencer Vineyard Zinfandel. This wine has beautiful aromas of violets, brandied cherries, cinnamon, and cloves that lead into flavors of dark cherry preserves, freshly picked blackberries, and red licorice. This wine has a plush mouthfeel with fine, well-integrated tannin and a dusty minerality. Wines like Cabernet Sauvignon, Red Bordeaux blends and Merlot also pair excellently.
Ribeye is the juiciest, most flavorful cut of steak that comes from the cow’s rib region. This cut contains incredible marbling that provides the perfect flavor and texture combination. We recommend pairing ribeye steak with a Cabernet Sauvignon or Malbec with more tannins to help cut through the juiciness and fattiness of the cut. Napa Valley Cabernet is a classic pairing for grilled steak, and you can’t go wrong with this pairing. We recommend pairing ribeye steak with our inaugural Cabernet Sauvignon wine, 2015 Voir Dire. Voir Dire is a full-bodied wine with rich dark fruit aroma and a hint of cocoa that pair wonderfully with any steak. The 2015 Voir Dire has more concentrated tannins that will bind with the fat in the ribeye and help cleanse the palate.
