Everything is better with wine—including seafood. However, it can be tricky to find the right wine pairing to go with your favorite seafood meals. For that reason, the team of wine experts at Theorem Vineyards has put together the best seafood and wine pairings. After reading this guide, you’ll know exactly what to order with your favorite seafood dish.
Crab & Riesling
Crab has a sweet and savory flavor that tastes even better with a good Riesling. The sweet and fruity flavors of a Riesling pair wonderfully with the richness of the crab. We recommend pairing your crab dish with the 2017 Stony Hill White Riesling.
This is a wine full of contrasts and complementary flavors. It has notes of chamomile, wet stone, delicate floral notes, and wonderful savory character. The palate is a mirror image of the nose, starting with slightly sweet floral and fruit notes, and finishing with an almost endless savory finish. It has a hint of residual sugar, reminiscent of Meyer lemon curd, and the clean, crisp acidity that is typical of Stony Hill White Riesling. This Riesling will allow you to taste more vibrant layers of flavors in your crab dish.
Lobster & Chardonnay
Eating fresh lobster is a delicacy, and it deserves to be paired with a wine that is equally as delicate. We recommend pairing your lobster dish with a well-balanced Chardonnay. The 2018 Theorem Vineyards Chardonnay is bright and has notes of freshly-squeezed lemon, tart pineapple, lime blossom, honeysuckle, and crushed rocks.
On the palate, the bright citrus notes meld with a creamy texture reminiscent of lemon meringue with a similar ethereal lift. Just as the flavors envelop your palate, a beam of vibrant acidity slices through the creamy texture and creates a finish that is refreshingly bright and lingering. We are thrilled to share this wine with you.
Salmon & Pinot Noir
Salmon is a rich, oily, and flaky fish that can be prepared in a variety of ways. Regardless of how you prepare your salmon, we believe you can never go wrong by pairing it with a Pinot Noir. Pinot Noir stands up to the richness of the salmon, while still being light enough to pair with seafood. We recommend pairing your salmon dish with 2016 King Richard’s Reserve™ Pinot Noir. This wine has elegant hues of dark garnet jewels and dark fruits. Bold cherry and blackberry scents accented with purple lilacs produce a balanced aroma. On the palate, you taste blackberry fruit and warm, inviting hints of cigar box. It becomes even more expressive on the finish, where fresh fruit details fan out.
Oyster & Chardonnay
Oysters tend to be buttery, briny, and smooth with a fuller texture. We recommend pairing your oyster dishes with a delicious Chardonnay. A Chardonnay is an excellent pairing because it helps push away a little bit of the brine that oysters have. The 2016 Schramsberg Blanc De Blancs is a great wine to pair with oysters. This wine has bright aromas of ripe green apples, Bosc pear, sweet spice, and buttered brioche, which intermingle with hints of fresh ginger, stone fruit, and coriander. Honeycrisp apple, grilled lemon, and orange peel bring fruitful notes to the mid-palate, ending with a clean, crisp acidity that's punctuated with caramelized and tropical flavors.
Shrimp & Sauvignon Blanc
Shrimp is dry, austere, and crisp, so it pairs well with a wine that cuts through the natural fat of the shrimp. We recommend pairing shrimp with our delicious, ultra-premium 2018 Sauvignon Blanc. This white wine has a perfect balance of fresh acidity and rich fruit flavors. Strikingly aromatic, the 2018 Sauvignon Blanc leaps from the glass with a beautiful array of citrus, stone fruit, flowers, herbs, and minerals. Everything translates through to the glass, with fleshy peach and ripe melon exploding on the palate. Lime zest and rocks tangle with jasmine, adding verve and complexity as it rides the long, crisp beam of acidity.
Tuna & Rosé
Tuna’s slightly sweet and meaty profiles pair wonderfully with Rosé. Rosé provides depth as well as the acidity that pair nicely with light citrus ingredients that often accompany tuna. We recommend pairing your tuna dish with the 2018 Corazón Cabernet Rosé. The jewel-like, pale salmon color is a delight to the eye. Aromas like dried rose petals jump out of the glass. Bright and vibrant at the same time, complex flavors include Bing cherry, red currant, and plum.
