Hawk's Prey

Hawk’s Prey was named for a moment during a July day among the vineyards. While the Itkin family was helping plant the vineyard, they noticed hawks circling them overhead. One family member asked what the birds were preying on, and a vineyard worker joked that, in the scorching heat of the day, it could very well be the people working in the vineyard. Now, the fruit of those vines lives in the bottles of this Cabernet Sauvignon.

Our 2018 release is the third harvest of vines that were cloned from Jenkins clone. The Jenkins clone has produced truly legendary wines, and Hawk’s Prey has joined a proud list of excellent vintages.

Theorem Vineyard’s 2018 Hawk’s Prey is a deep, rich 100% Cabernet Sauvignon. The wine weaves together luxurious aromas of red plum, espresso, cherry pastis, and Tahitian vanilla beans with hints of black raspberries, fresh tobacco, and milk chocolate. The sip is soft and subtle on the palate, exploding with a dense core of ripe richness that mirrors the aroma. Silky tannins give the wine structure and grip, while its acidity lengthens and focuses the wine. It finishes triumphantly with fresh chocolate-covered cherries, pastis, and ripe blackberries.
